Pico de Gallo

Combine the diced tomatoes, diced white onion, chopped cilantro and minced jalapeño in a medium bowl.

Add the lime juice and 1/2 tsp kosher salt, then stir to combine. Taste and adjust salt or lime as needed. Set aside at room temperature while you prepare the migas so flavors meld (10–15 minutes).

Prepare eggs
Crack the 6 eggs into a bowl, add 1 tablespoon milk, 1/2 tsp freshly ground black pepper and 1 tsp kosher salt. Whisk until homogenous and slightly frothy. This adds volume and creaminess to the eggs.

Heat pan and toast chips
Place a large nonstick or well-seasoned cast-iron skillet over medium heat. Add 1 tablespoon vegetable oil and 1 tablespoon butter. When the butter melts and foam subsides, add 4 cups tortilla chips and toast, stirring frequently, for 1–2 minutes until slightly warmed and starting to soften but not soggy.

Finish with cheese and butter
Turn off the heat and immediately add the remaining 1 tablespoon unsalted butter and 1 1/2 cups shredded sharp cheddar. Fold gently so the residual heat melts the cheese and the butter adds silkiness. Taste and adjust salt and pepper if needed.
Assembly and Garnish

Spoon the migas onto warmed plates or a shallow serving dish.

Top each portion with a generous scoop (about 1/2 cup) of pico de gallo placed on one side so it stays bright and fresh.

Add optional garnishes as desired: a drizzle or dollop of sour cream/crema, sliced avocado, and a sprinkle of sliced green onions.

Serve immediately while eggs are warm and chips still have a little texture. Offer extra hot sauce or lime wedges at the table.
