1. Prepare simple syrup (if you don't have any)
Combine equal parts granulated sugar and water (for example 1/2 cup sugar and 1/2 cup water) in a small saucepan. Heat gently, stirring, until sugar dissolves. Cool to room temperature before using. Makes more than enough; store leftover in the refrigerator up to 2 weeks.
2. Fill a highball glass or Collins glass with ice (about 1 cup).
3. In a cocktail shaker, add 2 oz vodka, 1 oz fresh lemon juice, and 0.75 oz simple syrup. If you prefer a sweeter/softer soda-forward drink, add 0.25 oz Sprite/7UP or a dash (2–3 drops) of lemon bitters here.
4. Add a small handful of ice to the shaker, cap it, and shake vigorously for 8–10 seconds to chill and dilute slightly.
5. Strain the chilled mixture into the prepared glass over the ice.
6. Top with about 3 oz cold club soda. Stir gently once to combine (one slow spoon stir or two gentle lifts).
7. Garnish with a lemon wheel or wedge on the rim. Taste and adjust: add a little more simple syrup (1/4 oz) if you prefer sweeter, or a squeeze more lemon juice if you prefer brighter tartness.
8. Serve immediately with a straw or stirrer.
