    Preheat the oven to 325°F (160°C). Line a standard 24-cup mini muffin tin with mini paper or silicone liners.

    Place the chocolate crackers or wafers in a food processor and pulse to fine crumbs (or put in a sealed bag and crush with a rolling pin). Measure out 1.5 cups of crumbs.

    In a medium bowl, combine the crumbs, 2 tablespoons cocoa powder, 2 tablespoons granulated sugar, and 1/4 teaspoon salt; whisk to blend.

    Pour the 5 tablespoons melted butter over the dry mixture and stir until evenly moistened and the mixture holds together when pinched.

    Divide the crust mixture evenly among the 24 liners (about 1 to 1.5 teaspoons each). Press firmly into the bottom using the back of a teaspoon or a small measuring spoon to form compact crusts.

    Bake the crusts for 5 minutes to set. Remove from oven and allow to cool while you prepare the filling. Reduce oven temperature to 300°F (150°C) if your oven runs hot; otherwise keep at 325°F (160°C) after lowering for filling step as described below.

Cheesecake Filling

    Bring room-temperature cream cheese, eggs, and sour cream to room temperature (this helps avoid lumps). Preheat oven to 325°F (160°C) if not already at temperature.

    In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the 16 oz room-temperature cream cheese on medium speed until smooth and creamy, scraping down the bowl once or twice (about 1–2 minutes).

    Add 2 tablespoons granulated sugar and 2 tablespoons packed brown sugar and beat on low-to-medium speed until combined and slightly fluffy, about 1 minute. Scrape down the bowl.

    Add the 3 tablespoons cocoa powder and 1/4 teaspoon fine salt; mix on low speed until cocoa is fully incorporated and uniform in color.

    Add the melted and slightly cooled 4 oz chocolate, mixing on low until just combined. Make sure the chocolate is not hot or it will loosen the filling.

    Beat in the sour cream (1/2 cup) and 1 teaspoon vanilla on low speed until smooth.

    Add the eggs one at a time, mixing on low speed and scraping the bowl after each addition. Mix only until combined—avoid whipping in too much air to prevent cracking.

    Using a small cookie scoop or spoon, divide the filling evenly among the prepared crust-lined mini muffin cups, filling each nearly to the top (they will puff slightly). This should make about 24 bites.

    Tap the pan gently on the counter a few times to release any large air bubbles.

    Bake in the preheated oven for 12–15 minutes, or until the centers are set but still slightly jiggly (they will firm up as they cool). Rotate the pan once halfway through baking for even color if your oven has hot spots.

    Remove from oven and allow the bites to cool in the tin on a wire rack for 30 minutes, then transfer to the refrigerator (still in liners) to chill for at least 1.5–2 hours, preferably 3 hours or overnight for best texture.

Ganache Topping (optional)

    Place the 3 oz chopped chocolate in a small heatproof bowl.

    In a small saucepan, heat the 3 tablespoons heavy cream over medium-low heat until it just begins to simmer around the edges (do not boil).

    Pour the hot cream over the chopped chocolate and let sit 30–60 seconds to soften, then stir gently until smooth and glossy. If using, stir in 1 teaspoon butter for extra shine and smoothness.

    Allow ganache to cool slightly until it thickens but is still pourable (about 5–10 minutes). Spoon or pipe a small dollop (about 1/2 teaspoon) onto each chilled cheesecake bite, smoothing slightly. Sprinkle with a light pinch of sea salt flakes if desired.

    Return bites to refrigerator for 10–15 minutes to set the ganache. Store chilled.

Assembly / Serving

    If you didn’t use liners, gently remove each bite from the tin and place on a serving platter. If using liners, leave them on for easy serving.

    Top each bite with a fresh berry or a bit of shaved chocolate if desired. Let sit at room temperature 5–10 minutes before serving for a softer mouthfeel, or serve chilled.
