Method

Bacon Jam (if making homemade)

    Cook bacon

    Place a large skillet over medium heat. Add diced bacon and cook until mostly crisp and fat is rendered, about 8–10 minutes. Use a slotted spoon to remove bacon to a bowl, leaving most of the fat in the pan.

    Sweat onion & garlic

    Add the chopped onion to the bacon fat and cook over medium heat until translucent and starting to brown, about 6–8 minutes. Add minced garlic and cook 30–45 seconds more until fragrant.

    Combine and reduce

    Return bacon to the pan with onions. Stir in brown sugar, apple cider vinegar, maple syrup (or honey) and black pepper. Reduce heat to low and simmer, stirring occasionally, until mixture is thick and jammy, about 8–12 minutes. If it sticks, add up to 2 tbs water to deglaze.

    Finish

    Taste and adjust seasoning. Transfer to a jar and let cool; bacon jam will thicken further as it cools. Makes ~3 tbs for the sliders (extra keeps in fridge up to 2 weeks).

Fried Green Tomatoes

    Slice tomatoes

    Cut the green tomatoes into 12 even slices, about 1/3 inch thick (to fit sliders). Lightly season both sides of each slice with a pinch of salt and pepper.

    Set up dredging stations

    Place flour in a shallow bowl. In a second bowl whisk eggs with buttermilk. In a third bowl combine cornmeal, 1 tsp salt, 1 tsp black pepper, and smoked paprika (if using).

    Dredge

    Working one slice at a time: dredge tomato slice in flour (shake off excess), dip into egg-buttermilk, then coat evenly with cornmeal mixture. Place on a wire rack while you repeat with remaining slices.

    Fry

    Heat a large skillet over medium heat and add about 1/4–1/3 inch vegetable oil (approx 1 cup). When oil is shimmering (350°F / a bubble test with a small pinch of cornmeal should sizzle), fry tomato slices in batches without crowding until golden brown and crisp, about 2–3 minutes per side. Transfer to a paper towel–lined plate and season immediately with a light sprinkle of salt.

Buns & Assembly

    Prepare buns

    Preheat oven to 350°F (175°C). Slice slider buns if not pre-split. Lightly brush the cut sides of the top and bottom halves with softened butter. Place cut-side up on a baking sheet and toast in the oven 5–7 minutes until lightly golden.

    Spread

    On each bottom bun, spread about 1/2 teaspoon of pimento spread (or a thin layer of chopped jarred pimentos). On the top bun spread a thin layer (about 1/4 tsp) of bacon jam so each slider has bacon jam flavor from the top as well.

    Assemble sliders

    Place one fried green tomato slice on each bottom bun. Spoon approximately 1/4 to 1/2 tbs bacon jam on the tomato (if you made extra jam). Top the tomato with a small handful of arugula (about 2–3 leaves). Cover with the top bun.

    Serve

    Arrange sliders on a platter and serve warm. Makes 12 sliders. Refrigerate any leftover bacon jam and keep fried tomatoes loosely covered for up to a day (reheat briefly in a skillet).
