    Prepare Glass

    Fill a 12-oz highball or Collins glass with ice cubes until about 3/4 full. Chilling the glass briefly in the freezer beforehand is optional but recommended for a colder drink.

    Measure Spirits and Citrus

    Using a jigger, pour 2 oz moonshine and 1/2 oz freshly squeezed lime juice into the glass over the ice. If you prefer a slightly sweeter mule, add 1/4 oz simple syrup now.

    Top with Ginger Beer

    Slowly pour 4 oz chilled ginger beer into the glass. Pour over the back of a spoon or pour gently down the side to preserve carbonation if desired.

    Stir

    Give the cocktail 4–6 gentle stirs with a bar spoon to marry the ingredients without flattening the ginger beer. Lift the spoon from bottom to top each stir to integrate.

    Garnish and Serve

    Garnish with a lime wheel or wedge on the rim and optionally a piece of crystallized candied ginger or a thin fresh ginger slice. Serve immediately with a straw or stirrer.

    Rinse or wash used tools (jigger, spoon, citrus juicer) promptly to avoid sticky residue from lime or simple syrup.
