Meringue Cookies

Mango Coulis

Coconut Jellies

Whipped Cream

Preparation

Meringue Cookies

1. Preheat the Oven

Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.

2. Whip the Egg Whites

In a clean mixing bowl, beat the egg whites until they form soft peaks.

3. Add Sugar Gradually

Gradually add the granulated sugar, continuing to beat until the mixture forms stiff peaks.

4. Incorporate Other Ingredients

Gently fold in cornstarch, vinegar, and vanilla extract until fully combined.

5. Shape the Meringues

Pipe or spoon the meringue mixture onto the prepared baking sheet, forming small discs.

6. Bake the Meringues

Bake for about 1.5 to 2 hours, or until the meringues are dry and crisp. Turn off the oven and let them cool inside.

Mango Coulis

7. Blend the Ingredients

In a blender, combine the diced mango, sugar, and lime juice. Blend until smooth.

8. Strain (Optional)

For a smoother texture, strain the coulis through a fine-mesh sieve.

Coconut Jellies

9. Prepare the Gelatin

In a small bowl, sprinkle gelatin powder over water and let it sit for 5 minutes to bloom.

10. Heat Coconut Milk

In a saucepan, heat the coconut milk and sugar over low heat until the sugar dissolves.

11. Combine and Cool

Remove from heat, add the bloomed gelatin, and stir until completely dissolved. Pour into molds and refrigerate until set.

Whipped Cream

12. Whip the Heavy Cream

In a mixing bowl, whip heavy cream until it starts to thicken.

13. Add Sugar and Vanilla

Add powdered sugar and vanilla extract, then continue to whip until soft peaks form.

Summer Berry Sauce

14. Cook the Berries

In a saucepan, combine mixed berries, sugar, and lemon juice over medium heat.

15. Simmer

Simmer for about 5-7 minutes, until the berries are soft and the sauce thickens slightly.

16. Cool and Serve

Remove from heat and let it cool before serving.
