Chocolate Coating
Method
Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
In a clean mixing bowl, whip the egg whites until soft peaks form.
Gradually add the granulated sugar, continuing to whip until the mixture is glossy and stiff peaks form. Then, gently fold in the vanilla extract.
Carefully fold in the shredded coconut until evenly distributed.
Using a spoon or cookie scoop, drop mounds of the mixture onto the prepared baking sheet, leaving space between each mound.
Bake in the preheated oven for about 15-20 minutes, or until the cookies are lightly golden. Remove from oven and let cool completely.
Chocolate Coating
Melt Chocolate
In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until melted and smooth.
Once the cookies are completely cooled, dip the bottom half of each cookie into the melted chocolate, allowing any excess to drip off.
Place the chocolate-dipped cookies on a wire rack or parchment paper to set. You may refrigerate them for faster setting.
