Mix dry ingredients
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until evenly combined and aerated.

Combine wet ingredients
In a separate bowl or large liquid measuring cup, lightly beat the egg. Add the milk, melted butter, and vanilla extract; whisk until blended.

Make the batter
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon just until combined and no large dry streaks remain. A few small lumps are fine—do not overmix. Let the batter rest 5 minutes to thicken slightly.

Cook flap jacks
Scoop 1/4 cup of batter per pancake (flap jack) onto the hot surface, spacing them about 2 inches apart. Cook until bubbles form across the surface and the edges look set, about 2–3 minutes. Flip and cook the second side until golden brown, about 1–2 minutes more. Adjust heat as necessary so they cook through without burning.

If making multiple batches, transfer cooked flap jacks to a baking sheet and keep warm in a 200°F (95°C) oven while you cook the rest.
