Burger Patties

Make and shape patties
Place the ground beef in a bowl. Add 1 tsp salt, 1/2 tsp freshly ground black pepper and 1 tsp Worcestershire sauce. Gently mix with your hands or a fork until just combined — avoid overworking. Divide the mixture into four roughly equal portions (about 4 oz each). Lightly form each portion into a patty about 3/4 inch thick and slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Cook patties
Heat a heavy skillet or griddle over medium-high heat and add 1 tsp vegetable oil, spreading to coat. When the surface is very hot and shimmering (about 2–3 minutes), add the patties, leaving space between them. Cook without moving for 3–4 minutes until a brown crust forms. Flip and cook another 3 minutes for medium (adjust time for desired doneness). During the last 60–90 seconds of cooking, place a slice of cheddar on each patty, cover the pan with a lid or tent with foil to melt the cheese.

Cook bacon
While patties cook, lay the 6 slices of thick-cut bacon in a cold skillet. Turn heat to medium and cook, turning occasionally, until bacon is crisped to your liking, about 10–12 minutes. Remove bacon to a paper towel–lined plate to drain. For even bacon distribution, crisp 1.5 slices per burger (or 2 slices for extra bacon) and keep warm.

Prepare vegetables and buns
Slice the red onion thinly into rings, slice the tomato into 4 even slices, and wash and pat dry lettuce leaves. Halve the burger buns. Spread about 1/2 tbsp (total 2 tbsp) softened butter on cut sides of buns. In a clean skillet over medium heat (or on the griddle), toast buttered buns cut-side down until golden, about 1–2 minutes. Remove and keep warm.

Assemble burgers
Place a toasted bottom bun on a plate. Spread a generous tablespoon of the prepared sauce (see Sauce section) on the bottom bun. Add a lettuce leaf, then the cheeseburger patty. Top each patty with 1.5 slices of bacon (or 2 if preferred), a tomato slice, a few onion rings, and 2 tbsp sliced pickles. Spread more sauce on the top bun and close the burger.

Make the sauce
In a small bowl, whisk together 1/4 cup mayonnaise, 2 tbsp ketchup, 1 tsp Dijon mustard, 1 tsp pickle juice and 1/4 tsp hot sauce if using. Taste and adjust seasoning — add a pinch of salt or extra pickle juice for tang. Refrigerate briefly if you prefer it chilled before assembling.
