Prepare and Clean Nopales

Trim and remove spines
Rinse the cactus paddles under cold water. Using a sharp knife, trim off the edges and remove any remaining spines or bumps. Peel only if paddles are particularly thick or tough; otherwise trimming is sufficient.

Dice nopales
Slice the paddles into 1/2-inch strips then dice into roughly 1/2-inch pieces so they match the size of the other salad components.

Boil to remove slime
Bring a medium pot of salted water to a boil. Add the diced nopales and cook 6–8 minutes until the pieces change to a more opaque color and the sliminess has reduced. Stir occasionally. Test one piece for tenderness; it should be slightly crisp-tender. Drain in a colander and immediately rinse under cold running water to stop cooking and remove residual slime.

Assemble Salad

Place the cooled, drained nopales in a large mixing bowl. Add the diced roma tomato, sliced red onion, chopped cilantro, and minced jalapeño (if using). Toss gently to combine so vegetables are evenly distributed.
Make Dressing & Season

In a small bowl or jar whisk together lime juice, olive oil, ground cumin, sea salt, and black pepper until emulsified. Taste and adjust salt or lime as needed — lime should be bright and slightly dominant.

Pour the dressing over the assembled cactus mixture. Toss thoroughly to coat all ingredients. Let the salad sit for 10–15 minutes at room temperature (or chilled for 20–30 minutes) to allow flavors to meld.
Finish and Serve

Right before serving, sprinkle the crumbled queso fresco (or feta) and toasted pepitas over the salad. Garnish with extra cilantro leaves.
