Method
Prepare plantains
Peel
Using a sharp knife, trim a small slice off both ends of each green plantain. Make a shallow lengthwise slit through the skin and pry the peel away with your fingers or a small knife to expose the flesh. If the peel is stubborn, score the skin into 3–4 sections and peel each.
Slice
Cut each peeled plantain on the bias into 1/4-inch to 1/3-inch thick diagonal slices. Aim for uniform thickness so slices cook evenly. For a thicker, sturdier 'macho' style, you can cut into 1/2-inch slices (adjust frying time accordingly).
Fry
Pour 1 1/2 to 2 cups vegetable oil into a heavy skillet or frying pan to create a shallow frying depth of about 1/4 to 1/2 inch. Heat the oil over medium-high until it reaches 350°F (175°C) or a piece of plantain sizzles immediately on contact.
Working in a single layer and not overcrowding the pan, add plantain slices to the hot oil in batches. Fry until golden brown on the underside, about 2–3 minutes, then flip and fry the other side another 2–3 minutes. For thicker slices (1/2-inch), fry 3–4 minutes per side. Adjust heat as needed to avoid burning; maintain a steady sizzle.
Finish & serve
If using, arrange plantains on a serving platter, squeeze lime wedges over them for brightness, and sprinkle with crumbled queso fresco or grated cotija. Serve warm with hot sauce on the side.
Leftovers: store cooled plantains in an airtight container in the refrigerator for up to 2 days. Reheat in a 375°F (190°C) oven on a baking sheet for 6–8 minutes or in a skillet over medium heat to restore crispness.
