Method

Section A - Tapas

    Chorizo Sausages

    Slice the chorizo sausages into rounds about 1 cm thick. Heat a skillet over medium heat and add the slices. Cook for about 5-7 minutes until browned and slightly crispy. Set aside.

    Patatas Bravas

    Peel and dice the potatoes into bite-sized cubes. Boil them in salted water for about 10 minutes until tender. Drain and let them cool. In a skillet, heat olive oil over medium-high heat, add the potatoes, and fry until golden and crispy, about 5-7 minutes. Toss with a spicy tomato sauce (made from crushed tomatoes, garlic, and chili flakes) and serve.

    Pimientos de Padrón

    Heat a skillet over high heat, add olive oil, and then add the Padrón peppers. Sauté for about 5 minutes until blistered. Season with sea salt before serving.

    Garlic Shrimp

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp and cook for about 3-4 minutes until they turn pink and opaque. Season with salt and pepper, and finish with a squeeze of lemon juice.

    Spanish Tortilla

    Peel and thinly slice the potatoes. Heat olive oil in a non-stick skillet, add the potatoes, and cook for about 15 minutes until soft. Beat the eggs in a bowl, then add the cooked potatoes and mix well. Pour the mixture back into the skillet and cook on low heat for about 10 minutes until set. Flip and cook for another 5 minutes. Slice into wedges to serve.

    Stuffed Mushrooms

    Preheat the oven to 180°C (350°F). Remove the stems from the mushrooms. In a bowl, mix cream cheese, garlic, herbs, and breadcrumbs. Stuff the mushroom caps with the mixture. Place on a baking tray and bake for 20 minutes until golden.

    Mixed Olives

    Simply place the mixed olives in a serving bowl. You can drizzle with olive oil and sprinkle with herbs if desired.

    Bruschetta with Tomato and Basil

    Toast slices of the loaf until golden brown. Top with a mixture of diced tomatoes, chopped basil, minced garlic, olive oil, salt, and pepper. Serve immediately.
