Clean the Gambas

Rinse the gambas under cold water and remove the shells, leaving the tails intact. Devein them by making a shallow cut along the back and removing the dark vein.

Prepare the Marinade

In a bowl, combine olive oil, minced garlic, red chili flakes, lemon juice, salt, and black pepper. Mix well.

Marinate the Gambas

Add the cleaned gambas to the marinade and toss to coat evenly. Let them marinate for at least 15 minutes.

In a large skillet, heat the olive oil over medium-high heat until shimmering.

Cook the Gambas

Add the marinated gambas to the skillet in a single layer. Cook for about 2-3 minutes on each side until they turn pink and opaque.

If using, pour in the white wine and cook for an additional 1-2 minutes, allowing the alcohol to evaporate and the flavors to meld.
