Preparation
Preheat the Oven
Preheat your oven to 400°F (200°C). This will ensure that the salmon cooks evenly and thoroughly.
Prepare the Salmon
Place the salmon fillet on a baking sheet lined with parchment paper or lightly greased with olive oil. Pat the salmon dry with paper towels.
Season the Salmon
Drizzle the EVOO over the salmon fillet and rub it gently to coat the fish evenly. Squeeze the juice of half the lemon over the fillet, and then season with salt and black pepper to taste.
Add Lemon Slices
Slice the remaining half of the lemon into thin rounds and place the slices on top of the salmon fillet for added flavor during roasting.
Cooking
Roast the Salmon
Place the baking sheet in the preheated oven and roast the salmon for about 12-15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Remove and Serve
Once cooked, remove the salmon from the oven and let it rest for a few minutes. Serve hot with your choice of sides.
