    Prepare the ingredients

    Chop the onion, bell pepper, and tomatoes. Mince the garlic. Slice the chorizo and prepare the chicken thighs by cutting them into bite-sized pieces.

    Soak saffron

    In a small bowl, soak the saffron threads in a few tablespoons of warm water to release their color and flavor.

    Sauté the proteins

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on all sides, about 5-7 minutes. Remove from the pan and set aside.

    Cook the chorizo

    In the same pan, add the sliced chorizo and cook for 3-4 minutes until it starts to release its oils.

    Add vegetables

    Add the chopped onion, garlic, and bell pepper to the pan. Sauté for another 5 minutes until the vegetables are soft.

    Combine ingredients

    Stir in the diced tomatoes and cook for a few minutes until they are softened. Add the rice to the pan and stir to coat it with the oil and vegetables.

    Add liquids and spices

    Pour in the chicken broth and bring to a simmer. Add the soaked saffron, smoked paprika, salt, and black pepper. Return the chicken to the pan and stir gently.

    Cook the rice

    Let the mixture simmer uncovered for about 15-20 minutes, without stirring, until the rice absorbs most of the liquid.

    Add shrimp and peas

    After 15-20 minutes, add the shrimp and frozen peas on top of the rice. Cover the pan with a lid or foil and cook for an additional 5-7 minutes, or until the shrimp are cooked through and the rice is tender.

    Remove the pan from heat and let it sit covered for 5 minutes before serving.
