Croquette Mixture

Breading

For Frying

Method

Prepare Croquette Mixture

  1. 1

    Melt Butter

In a large saucepan, melt the butter over medium heat until fully melted.

  2. 2

    Make Roux

Add the flour to the melted butter, stirring continuously for about 2 minutes to form a roux. The mixture should be light golden brown.

  3. 3

    Add Milk

Gradually pour in the milk while stirring constantly to avoid lumps. Cook for another 3-4 minutes until the mixture thickens.

  4. 4

    Combine Ingredients

Stir in the chopped ham, nutmeg, black pepper, and salt. Mix until well combined and cook for an additional 2-3 minutes.

  5. 5

    Cool Mixture

Transfer the mixture to a bowl and cover it with plastic wrap. Refrigerate for at least 2 hours, or until the mixture is firm.

Shape Croquettes

  1. 6

    Prepare Breading Station

Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

  2. 7

    Form Croquettes

Take small portions of the chilled ham mixture and shape them into small logs or balls, about 1-2 inches in size.

  3. 8

    Bread the Croquettes

Roll each shaped croquette first in flour, then dip in the beaten eggs, and finally coat with breadcrumbs. Ensure they are well coated.

Fry Croquettes

  1. 9

    Heat Oil

In a large, deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

  2. 10

    Fry Croquettes

Carefully add the breaded croquettes to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes, or until golden brown.

  3. 11

    Drain and Serve

Remove the croquettes with a slotted spoon and drain on paper towels. Serve hot with your favorite dipping sauce.
