    Rinse the fresh calamari under cold water. Remove the head and innards, and slice the body into rings about 1/2 inch thick.

    In a shallow bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. In another bowl, whisk together the eggs and buttermilk until fully combined.

    Coat the Calamari

    Dip the calamari rings into the egg mixture, allowing any excess to drip off. Then coat the rings in the flour mixture, ensuring they are evenly covered.

Frying

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
