Preparation of Chicken

Prepare the Chicken

Season the chicken breasts with salt and black pepper on both sides.

Dredge the Chicken

Coat each chicken breast in flour, shaking off any excess.

Egg Wash

In a bowl, beat the eggs and mix in the lemon juice. Dip each floured chicken breast into the egg mixture to coat thoroughly.

Cooking Chicken

Heat the Pan

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until hot.

Cook the Chicken

Carefully add the chicken breasts to the skillet and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and place on a plate.

Making the Sauce

In the same skillet, add the remaining butter and minced garlic. Sauté until fragrant, about 1 minute.

Pour in the chicken broth and bring to a simmer. Stir to combine and scrape up any browned bits from the bottom of the skillet.

Stir in the capers and let the sauce simmer for another 2-3 minutes to thicken slightly.

Return the cooked chicken breasts to the skillet, turning to coat in the sauce. Cook for another 2 minutes to warm through.
