Method

Prepare the Potatoes

  1. 1

    Cut the Potatoes

Peel the potatoes and cut them into bite-sized cubes.

  2. 2

    Boil the Potatoes

In a large pot, bring salted water to a boil. Add the potato cubes and cook until tender, about 10-15 minutes. Drain and set aside.

  3. 3

    Fry the Potatoes

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the boiled potato cubes and fry until golden and crispy, about 5-7 minutes. Remove from heat and drain on paper towels.

Make the Bravas Sauce

  1. 4

    Heat Oil and Garlic

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

  2. 5

    Add Spices and Sauce

Stir in the smoked paprika, then add the tomato sauce and red wine vinegar. Mix well.

  3. 6

    Sweeten and Season

Add sugar, salt, and black pepper to taste. Simmer the sauce for about 10 minutes, stirring occasionally, until thickened.

Serve the Dish

  1. 7

    Combine and Garnish

Place the crispy fried potatoes on a serving platter. Drizzle generously with the bravas sauce. Garnish with chopped parsley and serve with lemon wedges on the side.
