Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Stir lightly and let sit for about 5-10 minutes until frothy.

  2. 2

    Mix Ingredients

In a large mixing bowl, whisk together all-purpose flour and salt. Create a well in the center and pour in the activated yeast mixture and olive oil.

  3. 3

    Knead Dough

Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Filling Preparation

  1. 5

    Prepare Filling

In a medium bowl, mix together cream cheese, diced jalapeños, shredded cheddar cheese, garlic powder, and chopped chives until well combined.

Assembly and Baking

  1. 6

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 7

    Shape Bombas

Once the dough has risen, punch it down and divide it into small balls (about the size of a golf ball). Flatten each ball and place a spoonful of the filling in the center. Fold the edges over and pinch to seal.

  3. 8

    Arrange on Baking Sheet

Place the filled bombas seam-side down on a greased baking sheet.

  4. 9

    Second Rise

Cover the shaped bombas with a cloth and let them rise for an additional 20-30 minutes.

  5. 10

    Bake

Brush the tops of the bombas with melted butter mixed with garlic powder and chopped chives. Bake in the preheated oven for 20-25 minutes until golden brown.

  6. 11

    Cool and Serve

Remove from the oven, let cool slightly, and serve warm.
