    Prepare the Pork Chop

    Season the pork chop with salt and black pepper on both sides.

    Sear the Pork Chop

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the pork chop and sear for about 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

    Sauté Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and mushrooms, and sauté for about 3-4 minutes until they soften.

    Add Spices and Liquids

    Stir in the minced garlic, cherry peppers, red pepper flakes, and olives. Cook for an additional 2 minutes. Pour in the white wine and chicken broth, scraping any browned bits from the bottom of the skillet.

    Return Pork Chop

    Return the seared pork chop to the skillet. Cover and let simmer for about 15-20 minutes on low heat until the pork is cooked through and reaches an internal temperature of 145°F (63°C).
