Preparation Steps
1. Prepare the Eggplant
Preheat your oven to 400°F (200°C). Slice the eggplant lengthwise into 1/4 inch thick slices. Sprinkle with salt and let sit for 20 minutes to draw out moisture. Pat dry with paper towels.
2. Cook the Eggplant
Brush the eggplant slices with olive oil on both sides and place them on a baking sheet. Roast in the preheated oven for about 20 minutes, flipping halfway through, until tender and slightly browned.
3. Make the Filling
In a bowl, combine ricotta cheese, half of the mozzarella, Parmesan cheese, egg, minced garlic, chopped basil, salt, and black pepper. Mix until well combined.
4. Assemble the Rollatini
Spread a little marinara sauce on the bottom of a baking dish. Take one eggplant slice, place a spoonful of the cheese filling on one end, and roll it up. Place seam-side down in the baking dish. Repeat with remaining eggplant slices and filling.
5. Top and Bake
Pour the remaining marinara sauce over the rollatini and sprinkle with the remaining mozzarella cheese. Cover with foil and bake at 400°F (200°C) for 25 minutes. Remove the foil and bake for an additional 10 minutes until bubbly and golden.
6. Serve
Let it cool for a few minutes before serving. Garnish with extra basil if desired.
