In a large bowl or measuring cup, combine 2 cups of amber or pale ale with 1 cup water, 1/4 cup low-sodium soy sauce, 2 tablespoons apple cider vinegar, 2 tablespoons brown sugar, 1 tablespoon Dijon mustard, 1 tablespoon Worcestershire sauce and 1 tablespoon fresh lemon juice. Whisk until the sugar dissolves and mixture is homogeneous.

Make marinade

Taste the marinade briefly and adjust balance: add up to 1 teaspoon more brown sugar for sweetness or 1 teaspoon more vinegar for brightness as desired.

Stir the minced garlic, 2 tablespoons chopped fresh thyme, 1 tablespoon chopped fresh rosemary, 1 teaspoon smoked paprika, 1 teaspoon freshly ground black pepper and 1 teaspoon kosher salt into the marinade. Mix thoroughly so herbs and spices are evenly distributed.

Add aromatics

Place 2 lbs boneless skin-on chicken thighs (or pork shoulder cubes) in a large resealable plastic bag or nonreactive container. Pour the beer marinade over the protein, pressing out excess air if using a bag, and ensure pieces are submerged as much as possible. Seal and refrigerate for 4–8 hours (minimum 2 hours). For more flavor, marinate up to 12 hours but not more than 24 hours for chicken to avoid texture breakdown.

Marinate protein

Remove the protein from the fridge 30 minutes before grilling to come closer to room temperature; reserve the marinade for later use (see note).

Preheat grill to medium-high (about 400–450°F / 200–230°C). Strain the reserved marinade through a fine-mesh sieve into a small saucepan to remove solids. Bring to a rolling simmer and cook for 4–5 minutes to reduce and to kill any raw-meat bacteria. Add 2 tablespoons unsalted butter and 1 tablespoon honey to the reduced marinade, whisking until incorporated. Keep warm on very low heat.

Prepare grill and baste

Oil grill grates lightly. Place chicken thighs skin-side down and grill 6–8 minutes until the skin is golden and releases easily; flip and grill another 5–8 minutes until internal temperature reaches 165°F (74°C). If using 1–1.5" pork shoulder cubes on skewers, grill 3–4 minutes per side until nicely charred and internal temperature reaches 145°F (63°C) with a 3-minute rest. During the last 6 minutes of cooking, brush the warm reduced marinade onto the meat every 2 minutes to build a glaze.

Grill the protein

When cooked, transfer to a resting platter for 5 minutes. Finish by spooning any remaining warm glaze over the meat and scattering 2 tablespoons chopped fresh parsley. Serve with lemon wedges to squeeze over before eating.

Spread the celery salt on a small plate. Rub the lime wedge around the rim of a pint or highball glass, then dip the rim into the celery salt to lightly coat. Set the glass aside.

Rim the glass

Add large ice cubes or crushed ice to the prepared glass until about three-quarters full.

In a separate mixing glass or small shaker, combine fresh lime juice (0.5 oz), fresh grapefruit juice (0.75 oz) and simple syrup (0.5 oz). Add 2 dashes of Angostura bitters.

Fill the mixing glass with ice, stir gently for about 10 seconds to chill and dilute slightly. If using a shaker, give a brief shake (2–3 seconds) and then strain; the aim is to chill without excessive frothing.

Pour the chilled citrus and bitters mixture over the ice in the prepared glass.

Slowly tilt the glass and gently pour 12 oz of chilled pilsner or light lager down the side so it cascades in — this preserves carbonation and creates a layered look. Pour slowly to avoid overflow and excessive foam.

Give the drink one gentle stir (just 2–3 turns) to incorporate the beer with the citrus syrup mixture without flattening it.

Garnish with a lime wheel on the rim and a thin grapefruit slice floated on top or slid onto the rim. Optionally express a lime wedge over the drink for an extra citrus aroma before dropping it in.

Serve immediately while carbonated. Advise drinkers to sip slowly to enjoy the contrast of hoppy beer and bright citrus.

If your cardstock is not already folded, trim to a 5" x 7" rectangle and fold in half to create a 3.5" x 5" folded card (or use pre-cut 5" x 7" folded). Make sure edges are even by using a ruler and paper trimmer or scissors.

Prepare card base

Trim the printed gift card insert to fit the inside of the card. Typical insert size is slightly smaller than the card interior (for a 5" x 7" card, trim insert to about 4.75" x 6.75"). Align the insert so margins are even.

Attach two small pieces of double-sided tape or two adhesive foam squares to the back of the gift card—one near the top edge and one near the bottom edge. If you want a removable option, use low-tack adhesive or a small envelope pocket instead.

Attach adhesive to gift card

Place the insert face-down. Measure and mark the desired location of the gift card (commonly centered horizontally and positioned in the lower half of the insert). Use a ruler or lightly mark with the pen if helpful.

Position gift card on insert

Remove the backing from the tape/foam and carefully press the gift card onto the insert at the marked position. Press firmly for 10–15 seconds to ensure good adhesion. If using foam squares, this will give a slight raised effect.

Affix gift card to insert

Open the card and place the insert with the attached gift card inside. Use the pen to write a personalized message on the insert or on the card interior. Double-check spelling and amount details if handwritten.

Write or personalize message

Use two small pieces of double-sided tape at the top edge of the insert to attach it to the card interior so it doesn't shift. Alternatively, apply a thin line of adhesive along the back top edge only to allow the bottom to lift slightly when removing the gift card.

Secure the insert inside the card

If using ribbon or twine, wrap it around the closed card and tie a small bow. Place the card into the matching envelope. Add a decorative sticker seal on the envelope flap or card exterior for a polished look.

Add finishing touches

Confirm the gift card is secure but accessible, the insert is straight, the message is legible, and the envelope is sealed. If mailing, include any activation receipt or important instructions inside or attached.

Heat about 3.5 gallons (13.2 L) of strike water to ~165°F (74°C). This will give a target mash temperature of 152°F (67°C).

Heat strike water

Add crushed 2-row, crystal 40, wheat malt and oat malt to the mash tun. Pour strike water in, mix thoroughly to eliminate dry pockets and achieve an even mash. Target mash temperature: 152°F (67°C). Hold for 60 minutes.

Mash-in

After 60 minutes, raise mash to 168°F (76°C) for 10 minutes for mash out (optional) to stop enzymatic activity.

Mash rest & mash out

Sparge with enough water to collect ~6.5 gallons (24.6 L) of wort in your boil kettle (adjust based on system losses) at ~170°F (77°C).

Sparge

Bring collected wort to a vigorous boil, watch for boilovers.

Bring to a rolling boil

At the start of the 60-minute boil, add Magnum hops (0.4 oz) for bittering. With 30 minutes remaining add Cascade hops (0.5 oz). With 5 minutes remaining add the Cascade aroma hops (0.5 oz), Irish moss (1 tsp) if using, crushed coriander seed (1 tsp) if using, and lime zest (1 tbsp) if using. Boil for the remaining time.

60-minute boil schedule

At flameout (end of boil) chill the wort quickly to ~68°F (20°C) using an immersion chiller, counterflow, or plate chiller. If you do not have a chiller, place the kettle in an ice bath and stir to speed cooling.

Chill wort

While the wort is chilling, rinse jalapeños. For moderate heat and fresh green pepper flavor: halve the jalapeños lengthwise, remove seeds and membranes (for less heat) or leave them in (for more heat). Slice thinly or coarsely chop. For a cleaner aromatic addition, consider blistering the cut jalapeños in a dry pan over medium-high heat for 1–2 minutes per side until lightly charred, then cool. Use gloves to avoid skin/eye irritation.

Prepare jalapeños

For bright fresh pepper character and moderate heat, add jalapeños to the fermenter at high krausen (typically 24–48 hours into primary fermentation) in a sanitized mesh bag or directly (sanitized). For a cleaner, less vegetal note, add jalapeños at flameout steep for 10–15 minutes and then discard before chilling/fermentation. Common approach for this style: split additions — half at flameout (steep 10 minutes) for aroma and half into fermenter at day 2 for fresher, integrated heat.

Timing of addition

If adding fresh jalapeños directly to the fermenter, sanitize them by briefly dunking in a 1:20 solution of household sanitizer to water or use vodka rinse (optional) — note brief sanitizer contact may mellow volatile aromatics. Alternatively, roast/charr for sanitation and flavor before adding.

Sanitizing jalapeño additions for fermenter

Transfer chilled wort to the sanitized fermenter. Top up with water to reach 5 gallons if needed. Aerate vigorously (shake, splash, or use oxygenation) to supply yeast with oxygen prior to pitching.

Transfer and aerate

Hydrate or acclimate the yeast per manufacturer's instructions and pitch at ~65–68°F (18–20°C).

Pitch yeast

Ferment at 64–68°F (18–20°C) for about 5–7 days until activity slows and gravity is dropping. If using split jalapeño additions, add the second half of the prepared jalapeños to the fermenter at 24–48 hours into fermentation (high krausen) to integrate fresh pepper character without oxidized flavors.

Primary fermentation

After primary fermentation slows (about day 4–6) add the Cascade dry hop (0.5 oz) along with any remaining jalapeño if you didn't add all earlier. Leave on for 3–5 days. Keep fermenting temperature in the same range to avoid producing off-flavors.

Dry hopping

Allow fermentation to finish until gravity is stable for 2–3 days (target final gravity ~1.008–1.012 for a session ale).

Finalize fermentation

Cold crash the beer to ~35–40°F (2–4°C) for 24–48 hours to encourage yeast and particulates to drop out and to lock in flavors.

Cold crash and clear

If bottling: dissolve 3.25 oz (approx. 92 g) corn sugar in 1 cup boiling water, cool and gently mix into the bottling bucket with the beer, then bottle. Target carbonation: 2.0–2.4 volumes CO2. If kegging: transfer to keg and carbonate with CO2 to desired volumes.

Bottling or kegging

If bottled, condition at room temperature for 10–14 days, then chill before serving. If kegged, allow 24–48 hours for CO2 equilibration at serving pressure/temperature.

Condition

Taste the finished beer. If heat is too low/too high for next batch, adjust jalapeño quantity or whether you include seeds/membrane, or change timing (more at flameout for milder aroma; more in fermenter for integrated heat). For more citrus/brightness consider adding additional lime zest or a small amount of fresh lime juice at packaging (careful with sanitation).

Heat 4.0–4.5 gallons (adjust to your system’s typical mash water ratio) of brewing water to approximately 165°F (74°C) to achieve a target mash temperature of 152°F (67°C).

Add crushed grains (Maris Otter, Munich, Chocolate, Black patent, Roasted barley, Crystal 120L, Flaked oats) to the strike water, stirring gently until there are no dry clumps. Target mash temperature: 152°F (67°C). Mash thickness ~1.25–1.5 qts/lb.

Mash in

Hold the mash at 152°F (67°C) for 60 minutes. This temperature gives a balanced body with enough fermentability for an Imperial stout—helps retain some residual sweetness and mouthfeel.

Saccharification rest

Raise the mash to about 168°F (76°C) for 10 minutes to stop enzymatic activity and make lautering easier.

Mash out

Sparge with enough water heated to 168°F (76°C) to collect around 6.5–7.0 gallons of wort in the boil kettle (adjust to system losses). Aim for pre‑boil volume giving ~5.25 gallons post‑boil.

Bring collected wort to a vigorous boil. Watch for boilovers.

Bring wort to boil

At the start of a 90 minute boil, add 1.25 oz Northern Brewer bittering hops. A longer 90 minute boil helps develop darker color, reduces DMS, and concentrates the wort for higher OG typical of a Russian Imperial Stout.

Bittering addition

With 15 minutes left in the boil, add 1 tsp Irish moss or Whirlfloc and 1.0 oz East Kent Goldings (aroma). If using yeast nutrient, add it with 10–15 minutes left.

Mid‑boil additions

With 5 minutes remaining, add 0.75 oz Willamette or Fuggle for flavor/finish.

Late hop addition

If using dark syrup or dark candi, add it in the last 10 minutes of the boil to fully dissolve and integrate flavors.

Optional dark syrup/candi

Turn off heat at the end of 90 minutes. Cool the wort as quickly as possible to yeast pitching temperature (see next section).

End of boil

Use a wort chiller (immersion, counterflow, or plate) to cool the wort to 68°F (20°C) as quickly as possible to minimize infection and DMS. If using a no‑chill method, transfer to a sanitized container and cool overnight in fridge; be aware of oxidation and sanitation risks.

Transfer cooled wort to a sanitized fermenter. Top up with water to reach 5.25 gallons if needed, measuring original gravity (OG). Target OG: 1.090–1.100 for a Russian Imperial Stout.

Transfer & top up

Aerate or oxygenate the wort well (large beers need oxygen). Rehydrate or acclimate your yeast per manufacturer instructions and pitch 2 packs (or appropriate starter) to ensure healthy fermentation. Aim to ferment at 66–68°F (19–20°C) initially.

Allow primary fermentation to proceed at 66–68°F (19–20°C) for 7–10 days, or until vigorous activity subsides and gravity has dropped significantly. High‑gravity beers can benefit from a slightly warmer diacetyl rest later if needed.

Rack to a secondary fermenter or leave on the yeast for additional conditioning. Raise temperature to 68–70°F (20–21°C) for 2–4 days if you want to encourage diacetyl cleanup, then allow the beer to condition for 2–4 weeks (or longer). Russian Imperial Stouts benefit from extended aging: plan 2–6 months in bottle or keg for flavor development and smoothing of roasted bitterness.

Secondary / conditioning

When fermentation and conditioning are complete and final gravity is stable across several days, prepare to package. High OG stouts often finish at FG ~1.018–1.030 depending on yeast and adjuncts.

Final gravity & preparation

If bottling, dissolve 3.5 oz priming sugar in 2 cups boiling water, cool, add to a sanitized bottling bucket, then siphon beer onto the sugar solution and bottle. Cap bottles and store at room temperature for carbonation—this can take 2–3 weeks or longer for such a big beer.

Priming and bottling

If kegging, carbonate to a moderate level (1.8–2.2 volumes CO2) and force‑carbonate or natural carbonate in fridge, depending on your process.

Kegging

Age bottled or kegged stout for a minimum of 4–8 weeks; optimum flavor often comes after 3–6 months of aging. Store bottles in a cool, dark place.

Serve slightly below cellar temperature: 50–55°F (10–13°C). Pour carefully to leave some yeast if desired. Pair with strong cheeses, dark chocolate, roasted meats, or enjoy on its own.

Add the crushed Pale 2-row, Pilsner, flaked oats, Carapils and light crystal to the mash tun and stir to avoid dough balls. Mash at 152°F (67°C) for 60 minutes, holding temperature stable.

Raise mash temperature to 168°F (76°C) for 10 minutes by adding 170–180°F (77–82°C) water or direct heat. This helps stop enzymatic activity and improves lautering.
