Make the Filling
In a mixing bowl, beat the cream cheese until smooth. Add granulated sugar and mix until combined. Then, add sour cream and vanilla extract, mixing thoroughly. Finally, add eggs one at a time, mixing on low speed after each addition until just combined.

Bake the Cheesecake
Pour the cream cheese mixture over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.

Chill
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.

Prepare the Berry Compote
In a saucepan, combine 2 cups of mixed berries (such as strawberries, blueberries, and raspberries) with 1/4 cup of sugar and the juice of half a lemon. Cook over medium heat until the berries break down and the mixture thickens, about 10-15 minutes. Let cool before serving.

Serve
Once the cheesecake is thoroughly chilled, remove it from the springform pan. Top with the berry compote before serving.
