Preparing the Cauliflower

Preheat your oven to 450°F (230°C) to ensure it is hot enough for crisping the cauliflower.

Cut the Cauliflower
Remove the leaves from the cauliflower and cut it into bite-sized florets.

Make the Batter
In a large bowl, whisk together the all-purpose flour, water, garlic powder, onion powder, paprika, salt, and black pepper until smooth.

Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring it is completely coated. Shake off any excess batter.

Arrange on Baking Sheet
Line a baking sheet with parchment paper and place the coated cauliflower florets in a single layer. Drizzle olive oil over the top.

Bake the Cauliflower
Bake in the preheated oven for 20-25 minutes, or until the florets are golden brown and crispy, flipping halfway through.

In a small saucepan over low heat, melt the butter.

Once the butter is melted, stir in the buffalo sauce, garlic powder, and cayenne pepper until well combined.

Let the sauce simmer for 2-3 minutes, stirring occasionally to prevent burning. Remove from heat.

Toss Cauliflower in Sauce
Once the cauliflower is done baking, remove it from the oven and place it in a large bowl. Pour the buffalo sauce over the cauliflower and toss until evenly coated.

Transfer the buffalo cauliflower to a serving platter and enjoy while hot. Pair with celery sticks and ranch or blue cheese dressing if desired.
