Veggie Burger Patties

    Prepare flax egg

    In a small bowl combine the ground flaxseed with the warm water; stir and let sit for 5 minutes until thickened.

    Process base

    Place the cooked chickpeas in a food processor and pulse 8–10 times until coarsely mashed but not completely smooth (some texture should remain). Scrape down the bowl.

    Sauté aromatics

    Heat 1 tablespoon olive oil in a small skillet over medium heat. Add the finely chopped onion and grated carrot and cook, stirring, for 4–5 minutes until softened and any moisture has reduced. Add minced garlic in the last 30 seconds, stir, then remove from heat and let cool slightly.

    Mix & bind

    Transfer the mashed chickpeas to a bowl. Add the sautéed onion/carrot mixture, rolled oats, chopped parsley, cumin, smoked paprika, salt, pepper, and the prepared flax egg. Mix thoroughly with a spoon or by hand until the mixture holds together when pressed. If mixture is too wet, add up to 2 tablespoons more oats; if too dry, add 1 tablespoon water at a time.

    Form patties

    Divide the mixture into 4 equal portions. Wet your hands slightly and shape each portion into a 3/4-inch-thick patty approximately the diameter of your bun. Place patties on a plate and chill in the fridge for 15–20 minutes to firm up (helps them hold while cooking).

    Cook patties

    Heat remaining 1 tablespoon olive oil in a nonstick skillet over medium or medium–low heat. Add patties (do not overcrowd) and cook 4–5 minutes per side until golden and a crisp crust forms. If using cheese, place a slice on each patty in the final minute and cover the pan briefly to melt. Transfer cooked patties to a warm plate and keep covered.

French Fries

    Prep potatoes

    Wash and peel the potatoes if desired. Cut into 1/4–1/2-inch sticks for classic fries. Rinse the cut potatoes in cold water until the water runs clear to remove excess starch, then pat completely dry with clean kitchen towels or paper towels.

    Cook fries (oven-baked method)

    Preheat oven to 220°C (425°F). Toss the dried potato sticks with 3 tablespoons oil, kosher salt, pepper, and optional paprika/garlic powder until evenly coated. Spread in a single layer on a baking sheet lined with parchment (use two sheets if necessary). Bake 20–25 minutes, turning once halfway through, until edges are golden and crisp.

    Cook fries (fryer/stovetop method)

    If frying, heat 2–3 inches of vegetable oil in a heavy pot to 175°C (350°F). Fry potatoes in batches 3–4 minutes until pale golden and soft; remove and drain on paper towels. Increase oil temperature to 190°C (375°F) and fry a second time in batches 1–2 minutes until deep golden and crisp. Drain and season with salt immediately.

Burger Assembly

    Toast buns & prepare condiments

    Split the burger buns and lightly toast them face-down in a dry skillet or oven for 1–2 minutes until lightly golden. In a small bowl mix the mayonnaise and mustard; spread a thin layer on the bottom bun.

    Assemble burgers

    Place a lettuce leaf on the bottom bun, add the warm veggie patty (with melted cheese if used), top with a slice of tomato and a few rings of red onion. Spread additional mayo/mustard on the top bun if desired and place on top. Serve immediately with a generous portion of hot fries on the side.

    Serve

    Plate one burger per serving with approximately one-third of the fries. Offer ketchup, extra mayo, or pickles on the side.
