    Prepare vegetables

    Wash and dry the spinach, mushrooms, zucchini and bell pepper. Finely dice the onion, red bell pepper and zucchini; slice the mushrooms; chop the spinach; mince the garlic; slice chives and set aside for garnish.

    Heat a nonstick skillet over medium heat. Add 1 tablespoon olive oil and let warm until shimmering but not smoking (about 30 seconds).

    Add the diced onion and red bell pepper to the skillet. Sauté, stirring occasionally, until softened and beginning to brown, about 3–4 minutes.

    Add the sliced mushrooms and zucchini; sauté another 2–3 minutes until mushrooms release moisture and zucchini becomes slightly tender.

    Stir in the minced garlic, chopped spinach, 1/4 tsp salt and 1/8 tsp black pepper. Cook just until spinach wilts, about 30–45 seconds. Transfer the vegetable mixture to a small bowl and set aside. Reduce heat to low for the pan (you will use the same pan for the omelette).

Egg base & cooking

    Crack 3 large eggs into a medium bowl. Add 2 tablespoons milk or cream, 1/8 tsp salt and 1/16 tsp black pepper. Whisk vigorously until fully blended, slightly frothy and uniform in color (about 20–30 seconds).

    Heat the same nonstick skillet over medium-low. Add 1 tablespoon butter and let it melt, swirling to coat the pan and form a thin film. The pan should be hot but not smoking — butter should foam gently.

    Pour the beaten eggs into the pan. Tilt the pan to distribute eggs evenly. Let eggs set undisturbed for 10–15 seconds until edges begin to lift.

    Using a rubber spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg runs to the edges. Repeat around the pan until the top is mostly set but still slightly glossy and moist (about 45–60 seconds more).

    Evenly spoon the reserved vegetable filling onto one half of the omelette. Sprinkle 1/3 cup shredded cheese over the vegetables.

    Carefully fold the empty half of the omelette over the filled half using the spatula. Press gently to seal and cook 20–30 seconds more to melt cheese and finish cooking. If needed, reduce heat to low to avoid browning.

    Slide the omelette onto a plate, seam-side down, and rest 30 seconds.

Finishing & serve

    Dot the omelette with remaining butter if desired, sprinkle with chopped chives and an extra pinch of black pepper.

    If using, add hot sauce to taste or serve on the side.

    Serve immediately with toast or a green salad.
