    Crack and combine

    Crack 4 large eggs into a medium mixing bowl. Add 2 tablespoons whole milk. Season with 1 teaspoon salt and 1 teaspoon black pepper.

    Whisk

    Whisk vigorously for 20–30 seconds until yolks and whites are fully combined and the mixture is slightly frothy. This incorporates air for a lighter, fluffier texture.

Cook

    Heat pan

    Place a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and 1 teaspoon olive oil (if using). Allow butter to melt gently and foam but not brown — about 30–45 seconds. The pan should be warm rather than hot.

    Add eggs

    Pour the whisked eggs into the skillet. Let them sit undisturbed for 10–15 seconds until edges just begin to set.

    Scramble gently

    Using a heatproof spatula, gently push the set edges toward the center while tilting the pan to let uncooked egg flow to the edges. Repeat in 2–3 second intervals, moving the eggs from edges to center, creating large soft curds. Cook until eggs are mostly set but still slightly glossy and creamy — about 1.5–2 minutes total cook time depending on heat.

    Finish off heat

    When eggs are nearly done but still a touch runny, remove the skillet from heat. Residual heat will finish cooking them to avoid overcooking and dryness.

Finishing & Garnish

    Add cheese (optional)

    If using cheese, sprinkle 2 tablespoons grated cheddar or parmesan over the eggs off the heat and gently fold to combine so it melts into the warm curds.

    Plate and garnish

    Transfer scrambled eggs to a warm plate. Sprinkle 1 tablespoon chopped fresh chives or parsley on top. Taste and adjust seasoning with a pinch more salt or pepper if desired.
