Crack and season eggs
Crack 3 large eggs into a medium bowl. Add 1 tablespoon whole milk, 1 teaspoon salt, and 1/4 teaspoon freshly ground black pepper.

Cook omelette

Heat pan
Place an 8-10 inch nonstick skillet over medium-low heat. Add 1/2 teaspoon neutral oil and 1 tablespoon unsalted butter. Swirl until butter is melted and just starting to foam but not brown.

Stir then level
Using a silicone spatula, gently stir the eggs in the center for 8–12 seconds to create small curds, then tilt the pan and use the spatula to push set edges toward the center so uncooked egg flows to the edges. Repeat once until mostly set but still slightly moist on top (total cook time about 60–90 seconds).

Add fillings
When the eggs are mostly set with a slightly glossy top, sprinkle your chosen fillings (for example 1/4 cup shredded cheddar and 1 tablespoon chopped chives) over one half of the omelette. Do not overload — fillings should be warm or room temperature.

Fold and finish
Use the spatula to carefully fold the empty half of the omelette over the filled half. Let cook for another 10–20 seconds to warm the fillings and finish setting the eggs. For a creamier center, remove from heat when slightly soft; for firmer, leave an extra 10–15 seconds.

Plate and rest
Slide the omelette onto a warm plate, seam side down. Let rest for 30 seconds so residual heat finishes cooking and cheese melts.
