    Temper and form shells

    Chop the bittersweet chocolate finely and melt 2/3 of it in a heatproof bowl set over barely simmering water (double boiler) until it reaches about 45°C (113°F). Remove from heat and stir in the remaining 1/3 of chopped chocolate (and cocoa butter if using) until the temperature drops to about 31–32°C (88–90°F) for dark chocolate. If you do not temper, you can gently melt all chocolate and accept a softer finish.

    Using silicone half-sphere molds (6–8 cm diameter) or small cup molds, brush a thin even layer of tempered chocolate inside each cavity with an angled palette knife or pastry brush. Place molds in the fridge for 5–8 minutes until set, then apply a second thin layer to ensure sturdy shells. Chill until fully set, about 15–20 minutes.

    Carefully invert the molds and gently remove chocolate shells. If edges are uneven, trim briefly with a warm knife to neaten. If you used neutral oil, brush a tiny amount inside for additional shine.

Date-Caramel Layer (Dubai-inspired touch)

    Make date caramel

    In a small saucepan, melt the butter over medium heat. Add chopped Medjool dates and stir for 2–3 minutes until they soften. Add the heavy cream and cook, stirring, until the mixture comes together and the dates break down (3–5 minutes). Remove from heat, stir in sea salt, and transfer to a blender or use an immersion blender to puree until smooth. If mixture seems thick, add up to 1–2 tablespoons (15–30 ml) additional cream or water to reach a spreadable consistency. Let cool to room temperature.

    Spoon or pipe a thin layer (about 5–8 g) of date caramel into the bottom of each chocolate shell. Smooth evenly and chill 10 minutes to set slightly.

Chocolate Mousse Filling

    Prep gelatin (if using)

    If using gelatin for stability, sprinkle gelatin over the 15 ml cold water and let bloom for 5–8 minutes until spongy. Gently warm (do not boil) to dissolve and keep warm.

    Make mousse base

    Heat 100 ml of the heavy cream with the sugar in a small saucepan just until steaming (do not boil). Meanwhile, place the finely chopped semisweet chocolate in a bowl. Temper the hot cream into the chocolate: pour the hot cream over the chocolate and let sit 30–60 seconds, then whisk until smooth and glossy. Whisk in the egg yolks one at a time until fully incorporated and the mixture is silky. Stir in vanilla extract and the dissolved gelatin (if using). Allow the chocolate mixture to cool to about 30–35°C (86–95°F).

    Whip remaining 200 ml heavy cream to soft peaks. Gently fold one-third of whipped cream into the chocolate base to loosen it, then fold in the rest in two additions until fully combined and airy. Do not overmix.

    Transfer the mousse into a piping bag fitted with a round tip and pipe on top of the chilled date caramel in each chocolate shell, leaving about 3–5 mm space at the rim for sealing with chocolate if desired. Smooth the top with a small offset spatula. Chill in the refrigerator for at least 2 hours or until set (overnight for best texture).

Seal, Finish & Garnish

    Seal the cups

    Warm remaining tempered chocolate slightly (if necessary) to a fluid but not hot consistency. Spoon or pipe a thin layer over the mousse to create a sealed top, or temper and pour a small amount onto each mousse dome and smooth. Chill 10–15 minutes to set the seal.

    Carefully remove the chocolate cups from molds if you formed shells in molds; if you worked with half-sphere molds, assemble by placing a filled half in a matching empty half and gently press edges together using a little melted chocolate as glue. Chill briefly to bond.

    Sprinkle toasted chopped pistachios around the base or on the top, dust lightly with unsweetened cocoa powder if desired, and finish with tiny pieces of edible gold leaf placed on each cup for an opulent Dubai-inspired presentation. Return to fridge until serving.

    Before serving, allow cups to sit at room temperature 8–12 minutes so mousse is soft and chocolate slightly less firm. Serve on a platter and enjoy.
