    In a separate bowl or large measuring cup, whisk together the whole milk, vegetable oil, eggs, sour cream (or Greek yogurt), and vanilla extract until smooth.

    Carefully stir in the hot espresso (or strong coffee) in two additions. The batter will be thin and glossy; this is expected and results in a moist crumb.

Chocolate Syrup Soak

    While the cakes bake or cool, make the syrup. Place the finely chopped dark chocolate (2 oz) and hot water (1/4 cup) in a small heatproof bowl; stir until chocolate melts and the mixture is smooth.

    Stir in the simple syrup (2 tablespoons) to create a pourable, glossy chocolate syrup. Keep warm or at room temperature until ready to use.

    If cakes have domed, level them with a serrated knife. Using a pastry brush or spoon, evenly brush about 1–2 tablespoons of the chocolate syrup over each cake layer to add moisture and depth of flavor.

Chocolate Ganache (Glaze)

    Place the chopped dark chocolate (8 oz) in a heatproof bowl. Heat the heavy cream in a small saucepan over medium heat until it begins to simmer around the edges (do not boil).

    Pour the hot cream over the chopped chocolate and let sit for 2–3 minutes to soften. Stir gently from the center outward until the mixture becomes smooth and glossy. Add the unsalted butter and stir until melted and incorporated.

    Allow the ganache to cool and thicken at room temperature for 15–20 minutes, stirring once or twice so it reaches a pourable but coating consistency. If it becomes too thick, warm gently over a double boiler for a few seconds while stirring.

    Place one cake layer on your serving plate or cake stand. Pour a small amount of ganache onto the center and spread gently to the edges to create an even thin layer. Place the second cake layer on top and pour the remaining ganache over the top, using an offset spatula to smooth and let excess drip down the sides for a sleek, glossy finish.

Finishing & Decoration

    If using gold leaf, gently apply small pieces to the top edge and center of the cake with a dry, clean brush or tweezers to evoke a luxurious Dubai-inspired presentation. Use sparingly for an elegant effect.
