Ravioli filling
Season and combine
Stir in minced garlic, Italian seasoning, salt, and pepper. Cook 30–60 seconds until fragrant. Remove from heat and let cool 5 minutes. Transfer to a bowl, stir in grated Parmesan and the beaten egg to bind the mixture. Allow mixture to cool completely (chill 10–15 minutes if needed) so it can be used to fill or replace ravioli.
Optional: make filling-ready ravioli
If using unfilled pasta wrappers: portion filling into 8 equal balls (~2 tablespoons each) and fill ravioli as usual, sealing edges with water or egg wash. If using prefilled cheese ravioli (recommended for speed), proceed to breading — the filling step above is retained to reproduce the described dish using beef-stuffed ravioli; otherwise skip to Breading and use purchased meat-filled ravioli.

Set up breading station
Place the flour in a shallow bowl and season with a pinch of salt. In a second bowl whisk the two beaten eggs with the milk. In a third bowl combine plain breadcrumbs, Italian-style breadcrumbs (if using), grated Parmesan, kosher salt, and black pepper. Have a small plate or wire rack ready for resting battered ravioli.
Assemble ravioli (if using homemade filled)
If you filled fresh ravioli in the previous section, dust each sealed ravioli lightly with flour to remove excess moisture before breading.
Dredge ravioli
One at a time: dredge each ravioli in flour, shaking off excess; dip into the egg mixture to fully coat; then press into the breadcrumb mixture so both sides are evenly coated. Place breaded ravioli on a wire rack and let rest 5 minutes so the coating adheres. Repeat for all 8 ravioli.
Heat oil
Pour vegetable oil into a 10–12-inch skillet to a depth of about 1/4 inch (roughly 1 cup). Heat over medium to medium-high until shimmering and a breadcrumb dropped in sizzles immediately and turns golden in about 20–30 seconds (oil temperature about 350°F / 175°C).
Fry ravioli
Working in one or two batches to avoid crowding, carefully place ravioli in the hot oil. Fry until deep golden brown and crisp, about 1.5–2 minutes per side. Use tongs to flip gently. If using prefilled cheese ravioli, watch closely so filling doesn’t burst. Transfer to paper towels to drain and season lightly with a pinch of salt while hot.
Marinara sauce
Cook garlic
While the ravioli rest or fry, make the marinara: heat olive oil in a small saucepan over medium heat. Add the minced garlic and cook 30–45 seconds until fragrant but not browned.
Simmer sauce
Add crushed tomatoes and tomato paste, stir to combine. Bring to a gentle simmer, then add sugar (if using), dried oregano, salt, and pepper. Reduce heat to low and simmer, uncovered, 10–12 minutes to thicken slightly, stirring occasionally. Stir in chopped fresh basil at the end and remove from heat.
To serve
Divide marinara among serving plates or place in a small bowl for dipping. Arrange 4 toasted ravioli per person (8 total as described) on top of or beside the sauce.
