Buffalo Chicken Sandwich Recipe
6oz premium breast filet, your choice of fried or grilled. Tossed in our MK buffalo ranch sauce and topped with provolone cheese. Served with pickles on a toasted brioche bun.

Prepare
Pat the 6 oz chicken breast dry with paper towels. Season both sides with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper.
Option A - Fried (crispy)
If frying: place 1/2 cup buttermilk in a shallow bowl and add the seasoned chicken to soak for 15 minutes. Meanwhile, combine 3/4 cup all-purpose flour, 1/4 cup cornstarch, 1/2 tsp paprika and 1/2 tsp garlic powder in another bowl and mix. Heat 1 cup vegetable oil in a skillet over medium-high heat to reach about 350°F (175°C). Dredge the soaked chicken in the flour mixture, pressing to adhere. Fry the chicken 3–4 minutes per side (depending on thickness) until golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack briefly to drain.
Option B - Grilled
If grilling: lightly oil the outside of the seasoned chicken with 1 tsp olive oil. Preheat a grill or grill pan to medium-high. Grill the breast 4–6 minutes per side (depending on thickness) until grill marks form and internal temperature reaches 165°F (74°C). Let rest 3 minutes before proceeding.
Sauce
While the chicken cooks or rests, make the MK buffalo ranch sauce: in a small bowl whisk together 1/4 cup buffalo wing sauce, 1/4 cup ranch dressing and 1 tbsp melted unsalted butter until smooth. Taste and add 1/2 tsp honey if you prefer a touch of sweetness to mellow the heat. Keep warm or at room temperature.
Toss chicken in sauce: place the cooked chicken in a shallow dish or large bowl, pour the prepared buffalo ranch sauce over it, and gently toss or brush until evenly coated. Ensure the coating is thorough but not gloppy.
Assembly & Toppings
Toast the bun: heat a skillet over medium heat. Butter the cut sides of the brioche bun with 1/2 tbsp unsalted butter and toast cut-side down in the skillet until golden, about 1–2 minutes.
Melt cheese on chicken: place the sauced chicken back in the warm skillet or on a baking sheet and top with 1 slice provolone. Cover loosely with a lid or tent with foil for 30–60 seconds until the cheese softens and starts to melt.
Build the sandwich: place the sauced, cheese-topped chicken on the bottom brioche bun. Add 3 dill pickle slices on top of the cheese (or under, per preference). Close with the top bun.
Serve: slice in half if desired and serve immediately while hot. Provide extra buffalo ranch sauce on the side if desired.
