Cook Meat
Heat a large heavy-bottomed pot or Dutch oven over medium-high heat. Add 1 tablespoon oil. When hot, add the ground beef and ground pork (if using). Break meat into pieces with a wooden spoon and cook until browned and no longer pink, about 6–8 minutes. Season with 1/2 tsp salt and 1/4 tsp black pepper while cooking. Use a slotted spoon to transfer browned meat to a bowl, leaving rendered fat in the pot (keep about 1–2 tablespoons). If excess fat remains, drain off but leave the fond on the bottom.
Sauté Vegetables
Add remaining 1 tablespoon oil to the pot if needed and reduce heat to medium. Add the diced onion, bell peppers and jalapeño. Cook, stirring occasionally, until softened and beginning to brown, about 5–7 minutes. Stir in the minced garlic and cook 30–60 seconds until fragrant.
Build Flavor
Return the browned meat to the pot with the vegetables. Stir to combine. Add the chili powder, ground cumin, smoked paprika, dried oregano, brown sugar, remaining 1 tsp salt, 1/4 tsp black pepper and red pepper flakes (if using). Cook the spices with the meat and vegetables for 1–2 minutes, stirring constantly, to bloom the flavors.
Add Tomatoes & Simmer
Stir in the tomato paste and cook 1 minute. Add the crushed tomatoes, diced tomatoes with their juices and the beef broth. Bring the mixture to a gentle boil, scraping up any browned bits from the bottom of the pot. Reduce heat to low, partially cover with a lid, and simmer gently for 30 minutes, stirring occasionally.
Finish & Combine Beans
After 30 minutes, stir in the drained beans. Continue to simmer uncovered or partially covered for another 15–20 minutes to let the flavors meld and the chili thicken. Taste and adjust seasoning: add more salt, chili powder, or a pinch of sugar as needed. If chili is too thick, add up to 1/2 cup more broth or water to reach desired consistency.
Serve
Ladle chili into bowls. Squeeze a little lime over each serving and garnish with chopped cilantro. Offer shredded cheddar and sour cream on the side for topping. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
