Make or measure simple syrup

If you don't have pre-made simple syrup, combine equal parts granulated sugar and water in a small saucepan (e.g., 1/2 cup sugar + 1/2 cup water), heat gently while stirring until sugar dissolves, then cool. For this recipe measure 2 tablespoons of finished simple syrup.

In a small measuring cup or pitcher, combine 2 tablespoons simple syrup, 1 tablespoon fresh lemon juice, 1 teaspoon fresh lime juice, and 1 teaspoon vanilla extract. If using bitters, add 2 dashes. Stir to blend. If making a cola-style soft drink, add 1 tablespoon cola syrup or concentrate and stir until incorporated.

Build the Soft Drink

Fill a tall glass (or 2 smaller glasses) with about 1/2 cup ice cubes per serving (adjust based on preference).

Pour 2 cups (480 ml) club soda or sparkling water into each serving glass, leaving about 1/2 inch at the top to avoid overflow when mixing.

Divide the prepared sweetener/flavor mixture evenly between the glasses (about half of the mixture per glass). Stir gently once or twice with a bar spoon to distribute flavor without flattening carbonation.

Taste and adjust: if you prefer sweeter, add up to 1 more teaspoon simple syrup; for brighter acidity add a few drops more lemon or lime; for more vanilla/cream-soda flavor add a drop more vanilla; for cola intensity add another 1/2 tablespoon cola syrup. Stir gently after adjustments.

Garnish & Serve

Garnish each glass with an orange slice, lemon wheel, and a maraschino cherry as desired.

Serve immediately while fizzy. If preparing multiple servings ahead, keep syrup/flavor mixture chilled and add club soda just before serving to preserve carbonation.
