Tartine Preparation

    Roast the Mushrooms

    Preheat the oven to 200°C (400°F). Toss the mushrooms with BBQ spice blend, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

    Prepare the Whipped Goat Cheese

    In a bowl, whip the softened goat cheese until creamy. You can add a splash of water or olive oil to make it smoother if desired. Set aside.

    Grill the Sourdough Bread

    Heat a grill or grill pan over medium heat. Grill the sourdough slices for about 2-3 minutes on each side until they are golden brown and have grill marks.

    Fry the Cipollini Onions

    Peel the cipollini onions and dust them lightly with flour. In a deep pan, heat the oil over medium heat. Fry the onions in batches until golden brown and crispy, about 3-4 minutes. Drain on paper towels and season with salt.

    Assemble the Tartine

    Spread a generous layer of whipped goat cheese on each slice of grilled sourdough. Top with roasted mushrooms, drizzle with Alabama white BBQ sauce, and finish with crispy fried cipollini onions. Serve immediately.
