Prepare Bacon Shallot Marmalade

In a skillet, cook bacon until crispy. Remove and drain on paper towels. In the same skillet, add diced shallots and cook until soft. Add brown sugar, balsamic vinegar, and crumbled bacon. Simmer until thickened, about 10 minutes.

Make Truffled Tomato Brandy Aioli

In a bowl, mix mayonnaise, tomato paste, brandy, truffle oil, minced garlic, lemon juice, and salt to taste. Set aside.

Prepare Buttermilk Onion Rings

Slice onion into rings and soak in buttermilk for at least 30 minutes. In a separate bowl, mix flour, cornmeal, baking powder, and salt. Dredge onion rings in the flour mixture and fry in hot oil until golden brown. Drain on paper towels.

Cook Short Rib Burger

Form the short rib ground beef into patties and season with salt and pepper. Grill or pan-fry the patties for about 4-5 minutes per side, or until desired doneness. Top with Gruyere cheese during the last minute of cooking to melt.

Assemble the Burger

Toast the brioche buns. Place the cooked burger patty on the bottom bun, add bacon shallot marmalade, truffled tomato brandy aioli, and top with the buttermilk onion rings. Cover with the top bun.

Serve the burger with a side of French fries.
