Prepare the Vanilla Cream
In a saucepan, heat the heavy cream over medium heat until it starts to simmer. Split the vanilla beans lengthwise and scrape the seeds into the cream. Add the empty pods to the cream as well. Stir well and let it steep off the heat for 15 minutes.

Mix the Egg Yolks
In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until well combined and slightly thickened.

Combine Mixtures
Remove the vanilla pods from the cream mixture. Gradually whisk the warm cream into the egg yolk mixture to temper the yolks. Be careful not to cook the yolks.

Bake the Crème Brulee
Preheat your oven to 325°F (160°C). Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the custard is set but still slightly jiggly in the center.

Chill
Remove the ramekins from the water bath and let them cool to room temperature. Then, cover them with plastic wrap and refrigerate for at least 2 hours or overnight.

Caramelize the Sugar
Before serving, sprinkle a thin layer of brown sugar on top of each custard. Using a kitchen torch, caramelize the sugar until it is golden and crispy. If you don’t have a torch, you can broil them in the oven for a few minutes, watching closely to prevent burning.
