Cake Preparation

    Melt the Chocolate

    Preheat your oven to 180°C (350°F). In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

    In a separate bowl, whisk the eggs and coconut sugar together until frothy. Stir in the melted chocolate and vanilla extract until well combined.

    Combine Dry Ingredients

    In another bowl, sift together the coconut flour, cocoa powder, baking powder, and salt.

    Combine Mixtures

    Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.

    Pour the batter into a greased 9-inch round cake pan. Bake for 25-30 minutes or until a toothpick comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.
