Make the Crème Anglaise
In a saucepan, heat the heavy cream over medium heat until just simmering. In a separate bowl, whisk together the egg yolks and sugar until pale. Slowly pour the hot cream into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove from heat, stir in vanilla extract, and let cool.

Prepare the Chocolate Mousse
Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave. Once melted, let it cool slightly. Fold the cooled crème anglaise into the melted chocolate until smooth. In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the chocolate mixture.

Assemble the Mousse
Layer the mousse in serving glasses, alternating with layers of toffee sauce and chopped pecans. Finish with a layer of mousse on top.

Chill and Serve
Refrigerate the assembled mousse for at least 2 hours before serving. Garnish with additional toffee sauce and pecans if desired.
