Preparation

    Chill glass

    If desired, chill a highball or large Collins glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail.

    Measure ingredients

    Gather and measure gin, cherry brandy, Bénédictine (if using), fresh lime juice, simple syrup, pineapple juice, and Angostura bitters.

Mixing

    Combine in shaker

    Fill a cocktail shaker with ice. Add 2 oz gin, 0.5 oz cherry brandy, 0.25 oz Bénédictine (optional), 0.75 oz fresh lime juice, 0.5 oz simple syrup, 3 oz pineapple juice, and 2 dashes Angostura bitters.

    Shake

    Seal the shaker and shake vigorously for 10–15 seconds until well chilled and slightly frothy from the pineapple juice.

Serve & Finish

    Strain over ice

    Discard ice or water from the chilled glass and fill the glass with fresh ice. Strain the shaker contents into the glass over the ice.

    Top with soda

    Float or gently pour about 1 oz club soda or sparkling water on top to add a light effervescence. Stir once gently with a bar spoon to integrate.

    Garnish and present

    Garnish with a maraschino cherry and a pineapple wedge or wheel on the rim. Optionally express a lime peel over the drink for extra aroma.
