Seltzer Base

Method

Prepare Honey Syrup & Ginger Juice

    Make honey syrup

    Combine equal parts honey and warm water (for this recipe use 1/2 cup honey + 1/2 cup warm water) in a small saucepan or bowl. Stir until honey fully dissolves. Cool to room temperature. Refrigerate if preparing ahead.

    Extract ginger juice

    Peel and grate about 2 ounces (approximately a 2-inch piece) of fresh ginger. Place grated ginger in a fine mesh strainer or cheesecloth and press/ squeeze to extract juice. Measure out 2 tablespoons of ginger juice. If you don’t have a juicer, pulse grated ginger with 1 tablespoon water in a blender and strain.

Mix Base & Add THC

    In a large pitcher (about 2 quart capacity), combine the cold carbonated water (6 cups) and the 3/4 cup fresh lime juice. Stir gently to keep fizz. Add the prepared honey syrup (1/2 cup) in a slow stream, stirring to integrate, then add the 2 tablespoons fresh ginger juice and 1 teaspoon lime zest. Add a pinch of sea salt to round flavors. Stir gently but thoroughly to combine all ingredients.

    Measure and add the THC tincture slowly: add 1 teaspoon of your THC tincture or beverage concentrate into the pitcher and stir gently to disperse. If you have a lower-strength tincture and want a slightly higher dose, add up to the optional additional 1/2 teaspoon, in increments — wait at least 10 minutes and evaluate effects if serving immediately (see safety notes). Stir gently again. Taste a small amount and adjust sweetness or lime as desired by adding up to 1 tablespoon extra honey syrup or up to 1 tablespoon extra lime juice.

Chill, Serve & Garnish

    Fill four glasses with ice (about 1/2 cup ice per glass). Pour the seltzer over the ice, dividing evenly. Each serving will be approximately 1.5 cups (12 oz) including ice.

    Garnish each glass with a lime wheel, a sprig of fresh mint, and a sprinkle (about 1/2 teaspoon) of finely chopped crystallized candied ginger on top. Optionally rub a lime wedge on the rim before placing the garnish to enhance aroma.

    Serve immediately chilled. Advise guests of THC content and recommended serving size. Wait at least 60–90 minutes before consuming more to assess effects.
