    Dry shake

    If using egg white, add gin, lemon juice, simple syrup, Dalsy, and egg white to a cocktail shaker. Secure the lid and shake vigorously without ice for 10–15 seconds to build a silky foam.

    Wet shake

    Open the shaker, add ice (about 6 standard ice cubes), re-secure the lid and shake hard for 12–15 seconds until the shaker is very cold to the touch and well aerated.

    Double strain the cocktail into a chilled Collins or highball glass (use a Hawthorne strainer and a fine mesh strainer to remove ice shards and foam bits).

Garnish & Serve

    Top the strained cocktail with 2 oz chilled sparkling water or club soda, pouring gently to preserve the foam head.

    Garnish with a lemon wheel or twist on the rim. If desired, grate a little lemon zest over the foam for aroma (about 1 tsp). Serve immediately.
