Measure and add liquids
Into a cocktail shaker add 2 oz Dancing Goat Limousin Rye, 0.5 oz Dolin Dry vermouth, 1 oz fresh pineapple juice, 0.5 oz fresh lime juice, and 0.25 oz simple syrup.

Add bitters and ice
Add 2 dashes of Angostura bitters to the shaker. Fill the shaker with ice (approximately 1 cup) until nearly full.

Shake
Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker becomes cold and slightly frosted. The vigorous shake properly chills and dilutes the pineapple and lime, integrating them with the rye and dry vermouth.

Strain
Discard ice or water from the chilled glass if used. Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne and a fine mesh strainer to remove small ice shards and any pulp from the pineapple juice.

Express lime oils over the cocktail by holding a lime wheel or strip of zest over the drink and giving it a quick twist, then drop the wheel into the drink or rest a pineapple wedge on the rim. Optionally thread a thin pineapple slice onto a pick and lay it across the glass.
