Prep & Muddle

    Prepare glass and mint

    Choose a large wine glass or coupe and place it on the counter. Add the fresh mint leaves to a mixing glass or the serving glass. Pour in the fresh lemon juice and simple syrup over the mint.

    Gently muddle the mint, lemon juice, and simple syrup 4–6 times using a muddler or the back of a spoon—just enough to release the mint oils and bright citrus aroma. Avoid over‑muddling which can make the mint bitter.

Build the Drink

    Add the ice cubes to the serving glass (if you muddled in a separate mixing glass, transfer the muddled mixture into the serving glass now).

    Pour the chilled non‑alcoholic sparkling wine into the glass over the ice, then gently top with the chilled club soda or sparkling water. Pour slowly down the side of the glass to preserve bubbles.

    Using a bar spoon, gently stir 2–3 rotations to combine the muddled mixture with the sparkling base without flattening the bubbles.

Garnish & Serve

    Express the oils from the lemon peel over the drink by holding the peel over the glass skin side down and giving it a quick twist, then drop the peel into the glass as a garnish.

    Slap the remaining mint sprig once between your hands to release aroma and tuck it into the drink as a garnish. Serve immediately while sparkling.
