    Prepare glass

    Fill a large Collins or hurricane glass about three-quarters full with crushed ice and set aside so the glass chills while you build the cocktail.

    Build and shake

    In a cocktail shaker or mixing glass, add dark rum, light rum, coconut rum (if using), coffee liqueur, pineapple juice, orange juice and freshly squeezed lime juice. Add the crushed ice to the shaker (about 1/2 cup) and secure the lid.

    Shake vigorously

    Shake the mixture vigorously for 10–15 seconds until well chilled and slightly diluted.

    Pour and layer grenadine

    Strain the shaken cocktail into the prepared chilled glass over the remaining crushed ice. Slowly pour the grenadine down the side of the glass or over the back of a spoon; it will sink and create a sunrise effect.

    Finish with bitters

    Add 2 dashes of Angostura bitters on top of the drink to add aromatic depth.

Garnish

    Skewer the maraschino cherry and pineapple wedge (or place them on the rim), then rest a lime wheel against the fruit. Place the garnish on the rim or drop the cherry into the drink.

    Serve immediately with a straw. Optionally provide a small stirrer so guests can mix the grenadine through the drink if they prefer a homogenous flavor.
