Method

Preparing the Calamari

    Clean the Calamari

    Start by rinsing the fresh calamari under cold water. Remove the skin by gently pulling it off and then cut the calamari bodies into rings, about 1/2 inch wide. Set aside.

    Prepare the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure the dry ingredients are evenly distributed.

    Soak in Buttermilk

    Place the calamari rings in a separate bowl and pour the buttermilk over them. Let them soak for at least 30 minutes to tenderize the squid.

Making the Marinara Sauce

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add Tomatoes and Seasonings

    Pour in the canned crushed tomatoes and add the dried oregano, dried basil, sugar, salt, and red pepper flakes. Stir to combine.

    Simmer the Sauce

    Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally until it thickens slightly. Adjust seasoning to taste.

Frying the Calamari

    Heat the Oil

    In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Coat the Calamari

    Remove the calamari from the buttermilk and let excess liquid drip off. Dredge the rings in the flour-cornstarch mixture, shaking off any excess flour.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain.

    Serve

    Serve the fried calamari hot with the marinara sauce on the side for dipping.
