Soak the Black-eyed Peas
Rinse the black-eyed peas under cold water and remove any debris. Place them in a large bowl, cover with water, and soak for at least 4 hours or overnight. Drain before cooking.

Chop the Vegetables
Finely chop the onion and mince the garlic cloves. Set aside.

Cook the Black-eyed Peas
In a large pot, combine the soaked black-eyed peas and 4 cups of water. Add the bay leaf if using. Bring to a boil, then reduce the heat to low. Cover and simmer for about 45-60 minutes, or until the peas are tender.

Once the black-eyed peas are tender, remove the bay leaf (if used). Stir in the sautéed onion and garlic mixture. Season with salt, black pepper, and optional red pepper flakes or thyme, to taste. Let simmer for an additional 5-10 minutes to blend the flavors.
