Vegetable Medley

    Prepare the Vegetables

    Wash and chop the carrots, bell peppers, and zucchini into bite-sized pieces.

    Stir-Fry the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the chopped vegetables, salt, and black pepper. Stir-fry for about 10-12 minutes or until tender.

Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into quarters. Place them in a pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.

    Prepare the Garlic

    In the last 5 minutes of the potatoes cooking, add the garlic cloves to the pot.

    Mash the Potatoes

    Drain the potatoes and garlic. In a bowl, mash them together with butter, milk, salt, and pepper until smooth.

Quinoa Salad

    Cook the Quinoa

    Rinse the quinoa under cold water. In a saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes or until all water is absorbed. Fluff with a fork and let cool.

    In a large bowl, mix the cooled quinoa, diced cucumber, halved cherry tomatoes, feta cheese, olive oil, lemon juice, salt, and black pepper.

Corn on the Cob

    Prepare the Corn

    Remove the husks and silk from the corn. Fill a large pot with water and bring to a boil.

    Cook the Corn

    Add the corn to the boiling water and cook for 7-10 minutes. Remove and serve with butter and salt.
