Roasted Vegetables

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Vegetables

    Wash and peel the carrots, and chop them into bite-sized pieces. Core and slice the bell peppers into strips. Trim the ends of the zucchini and slice them into half-moons.

    Season the Vegetables

    In a large bowl, combine the prepared vegetables. Drizzle with olive oil, and sprinkle with salt, black pepper, and dried oregano. Toss until the vegetables are evenly coated.

    Roast the Vegetables

    Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.

Garlic Mashed Potatoes

    Cook the Potatoes

    Peel the potatoes and cut them into chunks. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Prepare the Garlic

    While the potatoes are cooking, peel and mince the garlic cloves.

    Mash the Potatoes

    Drain the cooked potatoes and return them to the pot. Add the minced garlic, butter, and milk. Mash until smooth and creamy. Season with salt and black pepper to taste.

Quinoa Salad

    Cook the Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy.

    Prepare the Salad Ingredients

    While the quinoa is cooking, dice the cucumber, halved the cherry tomatoes, and finely chop the red onion and fresh parsley.

    Combine and Dress the Salad

    In a large bowl, combine the cooked quinoa, diced cucumber, cherry tomatoes, red onion, and parsley. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine.
